Abstract:
In order to differentiate the red wines obtained from, „Cabernet Sauvignon” variety in terms of typicity and specificity, were studied the wines produced in three geographical regions of the Republic of Moldova („Codru”, „Ştefan-Vodă”, „Valul lui Traian”) and three wines with geographical indication produced in neighboring contries. For this study were aplied the spontaneous methods of sensory analysis in order to determine the points of differentiation af these wines. The obtained experimental data, as a result of sensory analysis, were processed using luster analysis and principal component analysis in order to define the wine’s profile.
