Evoluţia substanţelor fenolice la extragerea lor din tescovinele de struguri roşii

Abstract

În lucrarea de master a fost efectuate analizele agrobiologică, uvologică şi microbiologică ale strugurilor şi ale boabelor soiului Merlot, recoltate din podgoriile regiunilor Taraclia şi Nisporeni. S-a examinat distribuția masică a părților componente ale boabelor de soiul Merlot. În timpul fermentării mustuielii din strugurii Merlot a fost efectuată și evoluţia procesului de fermentare. S-au determinat indicii fizico-chimici din vinurile materie primă ale soiul Merlot din ambele arealuri specificate mai sus.

In the master's thesis, the agrobiological, uvological and microbiological analysis of the grapes and berries of the Merlot variety, harvested from the vineyards of the Taraclia and Nisporeni regions, was carried out. The mass distribution of the component parts of the Merlot berry was examined. During the fermentation of the must from the Merlot grapes, the evolution of the fermentation process was also carried out. Physico-chemical indices were determined from the raw material wines of the Merlot variety from both areas specified above.
