Abstract

The main source of raw materials for the meat industry is livestock and poultry. Therefore, the state of agriculture, in general, and livestock production in particular in the republic directly affects the situation and activity of meat processing enterprises. The production of meat and meat products requires an integrated rational use of raw materials, an important factor of which is the preservation of the initial quality of the products during processing.
