Impactul metodelor de tratare și a originii geografice a lemnului de stejar asupra caracteristicilor vinurilor roșii

Abstract

Scopul tezei de master este, elaborarea metodelor de intensificare a procesului de maturare, a vinurilor roșii cu utilizarea fragmentelor din lemn de stejar tratat special. Elaborarea metodelor de tratare a fragmentelor din lemn de stejar, pentru accelerarea proceselor de maturare a vinurilor roșii. În premieră, a fost elaborată o metodă de tratare a talașului de stejar, pentru accelerarea procesului de maturare a vinurilor roșii. Tratarea prevede, modelarea procesului de maturare, care este asemănător într-o măsură cu maturarea vinurilor în baricuri de stejar.

The purpose of the master's thesis is to develop methods for intensifying the process of maturation, of red wines using fragments of specially treated oak wood. Development methods of treating the fragments of oak wood, to accelerate the maturation processes of red wines. For the first time, a method of treating oak shavings for acceleration was developed the maturation process of red wines. The treatment provides for the modeling of the maturation process, which is similar to a degree to aging wines in oak barrels.
