Abstract:
The study focuses on the analysis of the quality of canned fish in tomato sauce, sold on the market of the Republic of Moldova. The organoleptic, physico-chemical, microbiological indices, and the analysis of toxic elements in canned fish in tomato sauce are generally in accordance with the standard norms and values. Some non-conformities have been recorded at the mass fraction of moisture, %, min, expressed in dry matter. This is the only physico-chemical parameter at which, after investigating the quality of canned fish in tomato sauce, have been recorded certain non-conformities. Still, these deviations are not significant and do not affect the quality of this product. In conclusion, we can mention that the investigated products are of good quality, harmless and safe for consumer health, corresponding as well to industrial sterility norms and values.
