Studiul microbiologic calitativ a unor conserve din carne

Abstract

Scopul şi obiectivele lucrării: identificarea și aprecierea indicatorilor microbiologici în unele categorii de conserve din carne de vită, porc și pasăre și aprecierea gradului de poluare microbiană. Obiectivele lucrării constituie efectuarea studiului bacteriologic pentru stabilirea microflorei bacteriene în conservele investigate. Semnificaţia teoretică. Datele obținute prezintă interes teoretic fiind efectuate în scopul determinării încărcăturii bacteriene. Cercetările microbiologice de laborator au oferit posibilitatea de a determina valorile cantitative a încărcăturii bacteriene în aceste categorii de conserve. Noutatea stiinţifică. Constă în aprecierea efectuării investigațiilor la tema dată și concluzionării asupra rezultatelor obținute. Valoarea aplicativă a lucrării. Teza prezintă interes și valoare după rezultatele obținute.

The purpose and objectives of the work: the identification and assessment of microbiological indicators in some categories of canned beef, pork and poultry and the assessment of the degree of microbial pollution. The objectives of the work are to carry out the bacteriological study to establish the bacterial microflora in the investigated cans. The theoretical significance. The obtained data are of theoretical interest, being carried out for the purpose of determining the bacterial load. Laboratory microbiological research has offered the possibility to determine the quantitative values of the bacterial load in these categories of cans. Scientific novelty. It consists in the appreciation of conducting investigations on the given topic and concluding on the results obtained. The applicative value of the work. The thesis shows interest and value according to the results obtained.
