dc.description.abstract Lucrarea dată include un studiu asupra suplimentării cu proteine a produselor alimentare. A fost evaluată influenţa proteinelor asupra proprietăţilor electrocinetice ale emulsiilor alimentare. S-a constatat că în dependenţă de concentraţia emulsiilor valoarea potenţialului electrocinetic se schimbă. en_US
