dc.description.abstract | Bacteria from the Enterobacteriaceae family are some of the most frequently isolated from fresh meat of domestic animals and poultry. In some situations, pathogenic forms including those with zoonotic potential, could predominate in fresh poultry meat. For these reasons, the purpose of our research was to identify bacteria from the family Enterobacteriaceae and genus Campylobacter in fresh poultry meat. The investigations were focused on the microbiological study of fresh meat samples taken from a slaughterhouse placed in mun. Chisinau, taking into account several points of the technological cycle. For the identification of bacteria, samples were performed on different selective and differential culture media. The identification of the types of bacteria (colonies) was made using the table spectrometer ”Maldi-Tof”. As a result, it is mentioned that out of 120 exanimated samples at Maldi-Tof, 83 samples were confirmed with the presence of bacteria of the genus Escherichia coli (thermoresistant), and in the rest were detected bacteria such as: Citrobacter brake, Acinetobacter baumanii, Morganella morganii, Proteus mirabillis, Klebsiella pneumonia, Klebsiela varriicola and Aeromonas verinii. The prevalence of these bacteria in poultry carcasses demonstrates an increased risk to the health of poultry flocks and for consumers of poultry meat. | en_US |
