dc.description.abstract Lucrarea dată reprezintă o sinteză despre metodele instrumentale de analiză a complexului aromatic din vin. Structura chimică variată implică şi metode de analiză diferite. Analiza olfactometrică este o metodă analitică care asociază prin consecutivitate cromatografia în fază gazoasă şi percepţia senzorială. Pentru aceasta analiză se pot utiliza trei tipuri de metode: diluţia succesivă a extractelor de arome, măsurarea intensităţii stimulilor olfactivi şi determinarea frecvenţelor zonelor odorante. en_US
dc.description.abstract This paper is a synthesis about instrumental methods of analysis of aromatic compounds from wines. Different chemical structure involves various methods of analysis. Olfactometry analysis is an analytical method which combines by sequence gas chromatography and sensory perception. For this analysis can be used three types of methods: sequential dilution analysis, measurement of stimuli intensity and detection frequency methods. en
dc.description.abstract Cet article est une synthèse sur les méthodes instrumentales d'analyse du complexe aromatique des vins. Des structures chimiques différentes impliquent des méthodes d'analyse variées. L’olfactométrie est une méthode qui combine par conséquence la chromatographie en phase gazeuse et la perception sensorielle. Pour cette analyse, on peut utiliser trois types de méthodes: dilution successive des extraits, mesure de l'intensité des stimuli et de la fréquence des citations. fr
dc.description.abstract В данной работе представлен обзор об инструментальных методов анализа ароматического комплекса вин. Разнообразная химическая структура подразумевает различные методы анализа. Ольфактометрический анализ сочетает газовую хроматографию и сенсорный анализ. Для анализа можно использовать три метода: последовательного разведения экстрактов, измерения интенсивности раздражителей и определения частоты сигналов. ru
