Abstract:
Linden honey belongs to the best botanical varieties of honey. The main goal of the research consists in the study of the physical and chemical indicators, microelements, macronutrients and the presence of heavy metals in the linden honey composition. It is determined, that mass fraction of water in the linden honey constitutes in average 17,06%, invert sugar – 91,64%, sucrose – 2,85%, diastatic number – 16,71 un. Gote, oxymethylfurfural – 7,5 mg/kg, total acidity – 1,83 cm3 NaOH solution in (milliequivalents) 100gr of honey, ash – 0,07%, insoluble substances in water – absent. It was found that the concentration of microelements in linden honey in average is the following: manganese (Mn) – 0,244 mg/kg, zink (Zn) – 0,502 mg/kg, cuprum (Cu) – 0,372 mg/kg, ferrum – 3,88 mg/kg, chromium (Cr) - 90-2,38 Bq/kg.
