Abstract:
The study of extraction regims of the must grapes for the natural pink wine production. The regime of technological modes of jus “must” extraction from moldavian red sorts of grape in order to get pink colour wine, was studied. There have been elaborated new grapes selection for the preparation of dry pink wines, a range of important conditions for the batch, asweel as detected the technological schemes of processing the red grape sorts. The detection nomogramm of maceration regime in dependence of temperature, spare antocianures and colour intensity of the product, were proposed.
