dc.description.abstract Se prezintă datele experimentale referitor la modificarea conţinutului de bioantioxidanţi şi starea reducătoare în căpşunile congelate (recolta anilor 2004 şi 2005). S-a determinat gradul de corelaţie între indicii stării reducătoare a căpşunilor congelate şi conţinutul în acid ascorbic, polifenoli, antociane şi conţinutul sumar al acestor bioantioxidanţi. Coeficientul de corelaţie Pearson a fost în limitele 0,9 ...0,99. en_US
dc.description.abstract There are presented the results of the experimental researches on the modification of the content of bioantioxydants and the reduction state of frozen strawberries (harvest of the period 2004-2005). It is also presented the level of correlation between the indices of the reduction state of frozen strawberries and the content of ascorbic acid, of anthocyanines, and total polyphenols on the other side. It was proven that the correlation coefficient Pearson was between 0.90… 0.99. It is recommended the conservation timing of frozen strawberries in order to preserve the nourishing value and the content of bioantioxydants. en
dc.description.abstract On présente les résultats des recherches expérimentales concernant la modification du contenu des bioantioxydants et l’état de réduction des fraises congelées (la récolte des années 2004 et 2005). On a déterminé le degré de dépendance entre les indices de l’état de réduction des fraises congelées et le contenu de l’acide ascorbique, des anthocyanes, des polyphénols. Le coefficient de corrélation Pearson a été compris entre 0.9 … 0.99. On recommande la durée de conservation des fraises congelées afin de protéger la valeur nutritionnelle et le contenu des bioantioxydants. fr
dc.description.abstract Представлены результаты исследований восстановительных свойств замороженных ягод клубники урожай 2004 - 2005 года. Показана зависимость окислительно-восстановительного состояния клубники ее восстановительных свойств от содержания биоантиохидантов. Коэффициент корреляции Pearson этих показателей составил 0,9…0,99. С целью сохранения пищевой и биологической ценности замороженной клубники при температуре минус 18оС рекомендуется сроки хранения не более 6…7 месяцев. ru
