dc.description.abstract Invenţia se referă la industria alimentară, şi anume la un procedeu de obţinere a acidifiantului de cupaj din struguri şi mere. Procedeul, conform invenţiei, include inspectarea, sortarea şi spălarea strugurilor, desciorchinarea, zdrobirea bobiţelor, tratarea mustuielii obţinute cu enzime pectolitice timp de 3045 min, presarea mustuielii, deburbarea şi filtrarea mustului obţinut, cupajarea cu acidifiant din mere în proporţie de 4560%, omogenizarea şi tratarea termică la temperatura de 7072°C timp de 20...25 min. Pentru obţinerea acidifiantului se utilizează struguri cu un conţinut de substanţe uscate hidrosolubile de 10,0...13,9% şi aciditatea titrabilă de 1,5...2,8% şi mere cu un conţinut de substanţe uscate hidrosolubile de 10,0...11,9% şi aciditatea titrabilă de 1,7...3,0%. en_US
dc.description.abstract The invention relates to the food industry, namely to a process for producing blended acidifier from grapes and apples. The process, according to the invention, comprises inspection, sorting and washing of grapes, destemming, crushing of berries, treatment of the resulting pulp with pectolytic enzymes for 30…45 min, pressing of the pulp, settling and filtration of the resulting must, blending with apple acidifier in a ratio of 45…60%, homogenization and thermal treatment at a temperature of 70…72C for 20…25 min. dc.description.abstract Изобретение относится к пищевой промышленности, а именно к способу получения купажного подкислителя из винограда и яблок. Способ, согласно изобретению, включает инспекцию, сортировку и промывку винограда, гребнеотделение, дробление ягод, обработку полученной мезги пектолитическими ферментами в течение 30-45 мин, прессование мезги, отстаивание и фильтрацию полученного сусла, купажирование с яблочным подкислителем в соотношении 45-60%, гомогенизацию и термическую обработку при температуре 70-72°C в течение 20-25 мин. Для производства подкислителя используются виноград с содержанием водорастворимых сухих веществ 10,0-13,9% и титруемой кислотностью 1,5-2,8% и яблоки с содержанием водорастворимых сухих веществ 10,0-11,9% и титруемой кислотностью 1,7-3,0%. en_US
